Lahmacun is dough rolled paper-thin, spread with ground beef, onion, tomato and parsley, and slid into a hot stone oven. It bakes in a few minutes. The edges go crisp, the middle stays soft. You do not slice it like a pizza — you squeeze lemon over it, lay some parsley down the middle, roll it, and eat it in your hands.
